Cut and Come Again Lettuce: Weeks of Salad From One Pot

Cut and come again lettuce works because the plant's growing point sits at the base, underneath the leaves you take. Pick the outer leaves and leave the center alone, or shear the whole top off about an inch above the soil, and new leaves push up from that crown. The Royal Horticultural Society is specific about the shearing version: a stump left about 2.5cm (1in) tall "should re-sprout leaves to give you at least one, if not two, additional smaller harvests." What the phrase actually means, and the two versions of it

Cut-and-come-again is one name covering two different jobs, and most guides blur them.

The RHS describes both in a single line: harvest "either snip a few leaves from each plant along the row, or let plants grow to maturity and snip all the top growth in one go."

The first is picking. You take the outer leaves off a living plant every few days and the plant carries on as a plant. The second is shearing. You take the whole top and wait for it to come back as a smaller crop.

On a balcony with one pot, this distinction is the whole article. Picking gives you a handful at a time over a long stretch. Shearing gives you a bowl now and a wait afterwards. Neither is wrong, but if what you want is salad on a Tuesday rather than a photograph of a full colander, picking is the one that fits the space.

The growth point, which is the reason any of this works

A lettuce plant is a rosette. Its newest leaves emerge from a tight point at the center, at the base, and the oldest leaves are the ones furthest out. That center is the part you are protecting.

Utah State University Extension states the practical consequence for leaf lettuce: "Older leaves are often stripped off the plants first, allowing the young leaves to continue to grow."

That is the mechanism in one sentence. The leaves are not the plant. The growing point is the plant, and leaves are what it produces. Remove leaves and the plant replaces them. Remove or damage the growing point and there is nothing left to do the replacing, which is why a cut made too low ends the harvest permanently rather than restarting it.

This is also why the answer is different for a plant like basil, where the growing points sit up the stem rather than at the base. Same question, different anatomy, different cut.

Where to cut, and how low is too low

For the shearing version, both sources I checked give a height, and they agree closely.

Utah State University Extension's leafy greens harvest guidance describes "hand clipping (1 inch above the soil)" and adds that "careful clipping and variety selection allows regrowth for multiple harvests."

The RHS gives the same figure in metric: "cut through the stem leaving a stump about 2.5cm (1in) tall."

An inch sounds like nothing when you are holding scissors over a pot, and the temptation is to go lower for a tidier result and a fuller bowl. That inch is the margin that keeps the crown intact. Cut into it and you are not harvesting, you are pulling the plant.

For the picking version there is no height to measure. You take individual outer leaves off at their base and leave everything in the middle standing. If you can still see the small pale leaves at the center, you have not gone too far.

How big before the first pick, and how soon

Two sourced numbers, and no more than two, because this is where gardening writing starts inventing.

The RHS: "Loose-leaf varieties can be harvested as soon as the leaves are big enough to be worth eating, when about 10cm (4in) long."

Utah State University Extension's leafy greens guidance: "harvest can start anytime from 3 to 5 weeks after seeding." That figure comes from a production guide rather than a balcony, so treat it as an order of magnitude, not a date to circle. Your pot, your light and your temperature all move it.

Beyond those two, I have no citable figure for how many days a picked leaf takes to be replaced in a container, and neither does anyone else who is being straight with you. Watch the plant instead. The center tells you whether it is still producing.

The honest number of harvests

Here is the part the search results tend to skip. Cut-and-come-again is usually sold as an endless salad machine, and the only source I found willing to publish a number is more modest than that.

The RHS, on shearing a mature plant to a stump: it "should re-sprout leaves to give you at least one, if not two, additional smaller harvests." Note the word smaller. The regrowth is not the same crop again.

Utah State University Extension's phrasing is similarly careful: careful clipping and variety selection "allows regrowth for multiple harvests," with no number attached.

So the honest framing for one pot is this. Shearing gets you the original crop plus probably one or two lesser ones. Picking outer leaves stretches the same plant over a longer run of small harvests, which on a balcony is usually the better deal, because a balcony grower wants a handful often rather than a glut once.

Which lettuce this works on

Both sources attach the technique to loose-leaf types specifically. The RHS gives its 4in guidance for loose-leaf varieties, and Utah State University Extension's note that "variety selection" is one of the two things allowing regrowth is doing quiet work in that sentence.

The logic follows from the anatomy above. A loose-leaf lettuce produces leaves outward from an open center, which is exactly what repeat picking needs. A heading type is bred to fold its growth inward into one dense head, so it is doing something different with the same energy, and the head is the crop.

If you are buying seed for a pot and repeat picking is the goal, that is the word to look for on the packet. It is the same logic behind the shortlist in which vegetables are actually easiest in containers, where the ones that suit small pots are the ones that give something back early rather than only at the end.

Heat is what ends it, not your picking

The usual reason a cut-and-come-again pot stops producing is not over-harvesting. It is temperature.

Utah State University Extension: "Lettuce grows best when temperatures do not exceed 75 degrees F." On bitterness specifically, its advice is to "avoid water stressing the plants and growing lettuce in temperatures above 80 degrees F." It also notes that "temperatures down to 32 degrees F do not seriously damage young plants," which tells you which end of the year the trouble is at.

A container makes this worse than a garden bed does, because a small volume of mix on a sunny balcony heats and dries faster than ground soil. Once a lettuce sends up a seed stalk, the picking is over. USU's timing rule for leaf lettuce is to pick "any time after leaves form, but before the seed stalk forms."

Keeping the plant able to come again

Between pickings a lettuce is a plant that has just lost some of its leaf area, so the two things that matter are water and not asking too much at once.

Water evenly. USU names water stress alongside heat as a cause of bitterness, which means a pot swinging between soaked and bone dry is doing more damage to the flavor than your harvesting is.

Take from more than one plant when you can. If you have three or four lettuces in a pot, two outer leaves from each beats stripping one plant bare, and the pot recovers as a whole.
